Preheat oven to gas mark 5/200 degrees. Place flour in bowl and rub in butter till you get rough breadcrumbs (not too fine). Add the sugar and cinnamon and stir. In a separate bowl, mash the bananas until slightly lumpy (you don't want it to be full of massive lumps, but not so smooth it looks like a milkshake!). Add bananas to mix and stir. Add eggs. Stir until a lumpy-ish batter (you don't want to take all of the air out of it so stir it until all of the ingredients have combined). If you find it is too stodgy, add milk- likewise, if it is too watery, add flour. Pour into large greased loaf tin and cook for approximately 1 hour, or until springy to the touch. This is gorgeous served warm and spread with butter or with creme fraiche....
