Pineapple Cheesecake

Drain pineapple and reserve liquid. Beat cream cheese with sugar. Beat cream into heavy cream. Add to cream cheese mixture. Add pineapple and mix well without beating it too much. Wet crackers in pineapple liquid and put at the bottom and on the sides of cake mould. Pour in cheese and cream mixture. Refrigerate overnight. Unmold before serving.
Introduction
This recipe was given to me a couple of years ago by my mother's hairdresser. It's been in the family ever since. It's a very refreshing dessert and not too rich.

- 1 can pineapple chunks
- 1 cup sugar
- 1 packet graham crackers
