When I was young watching my mum bake from scratch, she always levelled the spoon when measuring out the baking powder or bicarbonate of soda. It's something I always do. However, this is never mentioned in recipes. I feel this slight detail is beneficial for novice bakers because it is very important not to add too much leavening agents as you risk ending up with a dry end product.
