"Avocado hand” injuries, caused by using a sharp knife to remove the large, slippery stone, especially from slightly under-ripe fruit, can be very serious.
Many people have caused themselves nerve and tendon injuries, and sometimes ended up without full use of the hand.
Next time you enjoy avocado, try this simple, safe method to remove the stone. We'll assume you have carefully run a sharp knife all around the fruit, cutting through to the stone and then twisted the two halves apart. Now, with your hand protected by an oven mitt or towel, hold the half avocado steady and chop downwards into the protruding stone with a sharp, heavy knife. The blade only needs to penetrate 3-5mm into the stone. Then, simply twist the knife and even the tightest stone will come straight out. Carefully push the stone off the blade into the waste or compost bin. Job done!
