I am making Nigella's Keralan Fish Curry (for 6 people), but using king prawns instead. Shall I use fish stock or chicken? I was planning on serving with the Lemon Rice as a side dish, but would also like to make an extra side dish, not necessarily Indian. Also what can I also make as a starter, again it doesn't have to be an Indian dish. Thank you so much.

Nigella's Keralan Fish Curry is a light fish curry and you could use raw, shell off king prawns as an alternative to fish. Prawns cook very quickly so check frequently once they have been added to the curry sauce and cook at a very gentle simmer as the prawns can turn rubbery if they are boiled. We would suggest still using fish stock, or vegetable stock as an alternative. Fish stock concentrate can be tricky to find in some places, so if you need to use a cube then use the amount you would need to make 250ml (1 cup) stock. This is usually half of a stock cube.
If it is hot weather then a light, cool starter may be a good idea and we would suggest Nigella's Rice Paper Rolls. These can be assembled 1-2 hours ahead, but if you do this then make sure that you remove all of the seeds from the cucumber, otherwise the rolls will become soggy. Cover the rolls with a lightly dampened piece of kitchen roll (paper towel) and a piece of clingfilm (plastic wrap) and refrigerate until needed. For something more casual, serve a selection of dips and nibbles with drinks before dinner. We suggest considering Nigella's Bar Nuts, Peanut Butter Hummus and Simple Salsa as options. For extra side dishes the Nigellan Flatbread is always good for sopping up the lightly spiced curry sauce. A sprightly salad is also a good option, so you may like to try Nigella's Crunchy Salad with Hot And Sour Dressing or Chicken, Mango And Chicken Salad, and if you wanted to make this salad without chicken then you could use use peeled, deseeded and cubed cucumber instead.
