Can I substitute stem ginger and/or its syrup for fresh ginger juice in the Ginger And Walnut Carrot Cake frosting?

Our answer

Nigella's Ginger And Walnut Carrot Cake (from AT MY TABLE) is a satisfying and slightly rustic cake topped with a cream cheese frosting. The frosting is flavoured with juice squeezed from grated fresh ginger. It gives the warmth and spice of ginger without the grittiness you would get from using ground ginger in a frosting.

If you don't have any fresh ginger then we would suggest using 1 teaspoon of vanilla extract as an alternative. Vanilla is a traditional flavouring in cream cheese frosting and goes well with carrot cake. You could add a little syrup from a jar of stem ginger, though in our experience this doesn't give the full flavour of ginger.
