Full question
Nigella's red cabbage recipe includes fresh or frozen cranberries. What can I use instead of cranberries as they are out of season and not available frozen. There are dried cranberries in the recipe, which are available. Thank you for your help.
Our answer
Nigella's Red Cabbage With Cranberries (from AT MY TABLE) slowly cooks the finely shredded red cabbage with fresh or frozen cranberries and dried cranberries as this gives a wonderful sweet and sour combination. Red cabbage is also an excellent side dish as it can be made ahead and reheated and also freezes very well.
Nigella's recipe for Red Cabbage With Pomegranate (from NIGELLA CHRISTMAS) uses pomegranate juice, so if you can't get fresh or frozen cranberries then we suggest that you replace the 750ml (3 cups) of apple juice with the same amount of cranberry juce and the fresh/frozen cranberries with 2 medium (about 300g/12 ounces total weight) of apples that are then peeled, cored and finely chopped. Use juice labelled as just "cranberry juice" rather than "cranberry juice drink" as the latter tends to have extra sugar, sweeteners and flavourings added. For the apples we would suggest a tart apple such as a Bramley or Granny Smith. Cranberry juice can be less sweet than apple juice, so once the cabbage has cooked you may want to taste it to check if you need to add a pinch or two extra of sugar.
