I would like to make the Maple Chciken 'N' Ribs recipe, but what is sharp apple juice? Should I use an apple cider?

Nigella's recipe for Maple Chicken 'N' Ribs (from NIGELLA EXPRESS) uses apple juice as part of the marinade for the meat. The chicken and ribs are then cooked with the marinade, which reduces in the heat of the oven to a delicious, sticky glaze.

The recipe suggests using apple juice that is as sharp as possible. Some apple juices have added sugar (sometimes these are labelled as "apple juice drink") and as the marinade already contains maple syrup then it does not need further added sugar in the recipe. So a pure apple juice is ideal. In the US apple cider is unfiltered pure apple juice and it would be good for this recipe. It is usually found in supermarkets, farmers' markets and farmstands during Fall/Autumn. Please note however that apple cider is a non-alcoholic beverage and should not be confused with the cider that contains alcohol (called "hard cider" in the US).
