Baking Egg Tortilla Pie

Hi, I really enjoy the Egg Tortilla Pie featured on the show "Nigella: At My Table", but have trouble getting the eggs cooked just right. Can you please suggest a good temperature for baking it? Thank you!

Our answer

Nigella's Egg Tortilla Pie (from AT MY TABLE) bakes eggs, ham and cheese in a tortilla crust. It makes a speedy supper or a substantial breakfast and is very versatile as you can fill it with a variety of ingredients, depending on what you have in your fridge.

The pie should be baked in a hot oven to make sure that the crust becomes crisp and we would suggest 200c/400F/Fan 180c. Please note however that as ovens vary and and the cooking time is fairly short, then you should keep an eye on the pie and adjust cooking times accordingly. The edges of the tortilla should be crisp, the eggs should be cooked and the cheese melted and bubbling.
