Nigella's Honey Pie (from SIMPLY NIGELLA) is a tart that has an easy to make crust and a salty-sweet honey filling. The pie is baked in a metal tart pan and Nigella suggests that a baking sheet is put into the oven to preheat when the oven is switched on.

The crust of the pie is not blind baked (baked first without the filling), so the assembled tart is put onto the preheated baking sheet as this will help the pie crust to cook through quickly. The heat from the baking sheet penetrates through the tart pan more quickly than the bars of an oven shelf and kick starts the baking of the crust. The crust is also baked from frozen so the extra boost of heat is important.
