BBQ Maple Chicken And Ribs

Hi! I am going to host a BBQ party in a couple days and I would love to make the Maple Chickn And Ribs. Do you think that the glaze will burn because of the high temperapture? Is it better to use some aluminium foil to put between the meat and the BBQ rack? Thank you very much

Our answer

Nigella's Maple Chicken 'N' Ribs (from NIGELLA EXPRESS) marinates pork spare ribs and chicken thighs in a combination of apple juice, maple syrup, soy sauce and garlic. The marinated meat is then roasted in the oven, until cooked through and burnished.

Unfortunately as the marinade has sugar in both the juice and syrup, we suspect that the marinade would catch and burn on the more direct heat of a BBQ/grill before the meat is cooked fully. Instead we would suggest cooking the marinated chicken and ribs in the oven for one hour, then cook on the BBQ for a final 10 to 15 minutes so that the outside caramelizes sightly and the meat takes on a little smoky flavour. Watch the chicken and ribs carefully and turn frequently to prevent the outside from scorching. It may also help to lightly oil the grill grate before you cook, to reduce the risk of the chicken and ribs sticking.
