Bitter Orange Tart Filling

Full question

I made Nigella's Bitter Orange Tart and used the tin recommended in the book plus the correct amount of filling. But the filling seems a bit shallow, is this correct?

Our answer

Nigella's Bitter Orange Tart (from SIMPLY NIGELLA) is made with a ginger cookie crumb base and a sharp Seville orange curd filling. If you can't get the bitter Seville oranges, which have a very short season, then the curd can be made with a mixture of orange and lime juices.

The filling is very rich and intense, hence the tart is not deep-filled and you will notice from the photographs in the book that the filling comes about half way up the sides of the tart. There are several tarts in SIMPLY NIGELLA and the Bitter Orange Tart uses a 24cm (9-10 inches) diameter shallow fluted tart tin. This size has been clarified in reprints of the book. The other tarts in the book use a 23cm (9-inch) loose-bottomed tart tin that needs to be approximately 5cm (2 inches) deep, as these tarts need a deeper crust to hold their fillings. If you only have the smaller, deeper tin then it would also be fine to use this for the Bitter Orange Tart.
