Just curious about the Crispy Lamb Chops recipe. The recipe calls for fresh white breadcrumbs, but the introduction mentions using stale pita bread. Which is correct?

Nigella's Crispy Lamb Chops (from NIGELLA SUMMER are lamb cutlets (loin chops) that are coated in fresh breadcrumbs and shallow fried. This gives a crisp exterior with juicy, slightly pink meat inside.
Usually we prefer to make fresh breadcrumbs with slightly stale bread as if the breadcrumbs have too much moisture then they will not crisp up as well in the pan. If you have any leftover bread then you can whizz it in a food processor to crumbs and store the crumbs in a resealable bag in the freezer until you are ready to use them. Nigella suggests that if you don't have fresh breadcrumbs on hand then pitta breads are a possible alternative. As pitta is fairly thin it will stale quickly if the breads are split open and left to stand for 30 minutes or so. So both options are correct and you can use whichever is most convenient.
