Bundt Cakes

Full question
I want to make the Lemon And Thyme version of the bundt cake that Nigella did for her BBC program. I've watched it back on iPlayer again and it doesn't mention how much butter for the cake mix. I've searched everywhere for the recipe but to no success.
Is the cider in thie Cider And 5 Spice Bundt recipe the kind with alcohol or the "juice" version?
What is the best substitute for the flour in the Cider And 5 Spice Bundt Cake recipe to make it gluten free? It is quite a big cake to trial run with various options to make sure it comes out ok - I am thinking of a combination of ground almonds, gluten free flour and maybe some rice flour? Many thanks Jane
Our answer
Nigella's Lemon And Thyme Bundt Cake is made by firstly creaming together butter and sugar. Unfortunately we do not have space to publish full recipes in Kitchen Queries and Nigella's publishers agree which recipes will be published on websites so at the moment the full recipe can be found in NIgella's new book, Simply Nigella.
The cider in the Cider and 5 Spice Bundt Cake is the alcoholic type, or hard cider. In the UK this type is just referred to as cider but the US edition of Simply Nigella specifies hard cider.
During the testing of the recent book, Nigella did give a lot of consideration to how best to convert some cakes to gluten-free versions. Unfortunately we found that gluten free flours could give the larger cakes a slightly unpleasant texture and hence the cakes that are gluten free in Simply Nigella are the best ones to try and we regret that we are unable to give advice on gluten free flour blends to use.
