Can I Bake The Marble Cake In A Round Tin Instead Of A Ring Mould?

Asked by TallHall. Answered on 2nd April 2024

Full question

Hello, for the Marble Cake in Feast is there an alternative cake tin I could use? I don't have a ring mould and would rather not need to buy one. Thank you.

Our answer

Nigella's Marble Cake {from FEAST) has a mixture of vanilla and cocoa batters that are swirled together to give a marbled pattern. The cake is baked in a ring mould, sometimes called a savarin tin, with a diameter of approximately 24cm (10 inches).

If you don't have one of these tins then you could use a 22cm (9-inch) springform pan. However, it does mean that the cake will be skinnier but if you use a smaller tin then it can be difficult to make sure that the cake is cooked all the way through. We would suggest lining the base of the tin with baking parchment, as well as greasing the tin with butter. The marble effect will be more apparent from the top of the cake, so start with a spoonful of one flavour of cake batter in the centre then put spoonfuls of cake batter in a circle around this, alternating between the two flavours of batter. Continue with these concentric circles to fill the tin and use the batters, then swirl with a skewer to get the marbled effect. Bake following the instructions in the recipe. The cake is done when it is risen, firm to the touch and a cake tester inserted into the centre comes out clean.
