I loved the Chocolate Fudge Cake and icing but the icing is too rich for my kids. Would it work if I swapped out some or all of the 70% dark chocolate for milk chocolate? My son wants a chocolate fudge cake for his birthday. Thanks!

Nigella's Chocolate Fudge Cake (from Nigella Bites) is a moist chocolate cake that is covered with a chocolate fudge icing made from dark (bittersweet) chocolate, butter and icing (confectioners') sugar. The dark chocolate helps to flavour the icing as well as making it slightly firmer as it cools. You may be able to swap half of the dark chocolate for milk chocolate, but we would caution at using all milk chocolate as the extra sugar and lower levels of cocoa in the milk chocolate could make the icing a little too sweet and not as chocolatey.
You may also like to try the Devil's Food Cake as an alternative. It is also a dark, moist cake but has more of a ganache-style icing that is fudgy but not as sweet as the icing on the Chocolate Fudge Cake.
