Full question
I have made Parmesan Shortbreads and have some dough left over - can I freeze it?
Our answer
Nigella's Parmesan Shortbreads (from NIGELLISSIMA) are small, crumbly savoury biscuits or crackers that are perfect as a pre-dinner appetiser, served with cocktails. The dough can be made in advance and freezes very well. You can wrap the cylinder of dough tightly in a double layer of food wrap and a layer of foil and freeze for up to 3 months. Defrost overnight in the fridge before using.
You may find it more convenient to slice the dough into rounds and then freeze these uncooked shortbreads on a parchment-lined baking sheet until solid. Transfer the frozen shortbreads to resealable bags and freeze for up to 3 months. Bake direct from frozen. The shortbreads should not need any extra baking time as they are fairly small.
