I would like to make the Pomegranate Jewel Cake for Christmas and wonder if I can make well ahead and freeze it at the stage before the pomegranate seeds are added? Thank you.

Nigella's Pomegranate Jewel Cake (from FEAST) is a gluten-free cake that is perfect for serving as a dessert at Christmas. Fresh pomegranate juice is spooned over the cake as it comes out of the oven and absorbed into the top of the cake. When cool, the cake is decorated with pomegranate seeds. The cake, without the decoration, should be suitable for freezing. There is a risk that the top of the cake is a little sticky once it defrosts, but as the cake is decorated with the pomegranate seeds before serving then we do not think that this would be a particular problem.
Once the cake is cold, unspring it from its tin. We suggest leaving the cake on the base of the tin as this will help to protect it in the freezer, as gluten free cakes are a little more delicate. Wrap the cake in a double layer of clingfilm and a layer of foil and freeze for up to 3 months. To defrost the cake, unwrap it and leave it at room temperature for about 4 hours.
