Hi, I have made Nigella's Sticky Toffee Pudding on numerous occasions dinner parties. I would like to make it for 11 people. What is the best way to increase the sponge size please?

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is a slightly more grown-up version of the British favourite as it is given a slightly bitter edge with the inclusion of treacle. The recipe is made in a 23cm (9-inch) square pan and serves up to 9 people, but could possibly stretch to 11 people as a dessert at the end of a big meal. So you may not necessarily need to make a bigger version, depending on what is served before.

Unfortunately it is quite difficult to find a 25cm (10-inch) square pan, so you would probably need to use a roasting tin or rectangular cake pan with approximate dimensions of 23 x 32 cm (9 x 13 inches). For this size you would need to increase the recipe ingredients by a further 50% (i.e. use 1.5 times the original recipe). This should give 13-15 servings. The baking time is a little tricky, but this size of cake usually takes around 35-40 minutes to bake at 180C/160C fan/350F. Bake until the cake is risen, firm to the touch and a cake tester inserted into the centre comes out clean.
