Can I Make Nigellan Flatbread With Wholemeal Bread Flour?

I was wondering if the Nigellan Flatbread would be ok made with wholemeal strong bread flour? Or would it be too heavy? Thanks!

Our answer

The Nigellan Flatbread (from HOW TO BE A DOMESTIC GODDESS) is a pita-style bread sprinkled with nigella seeds (hence the name) and is perfect for dips and mezze.

It may be possible to use wholemeal bread flour (whole wheat flour) but the main problem with this flour is that it absorbs more liquid than regular white bread flour and if you use it as a straight swap the flatbreads could be a bit dense and dry. So you will need to add some extra warm water as you mix the dough. You should have a soft but not sticky dough. You may prefer to try a mixture of half white bread flour and half wholemeal bread flour, as this will give a slightly lighter result than all wholemeal flour. But be prepared still to add a little extra water, if necessary. However, please note that as we have not tried the recipe with these flour combinations, we are unable to guarantee the results.
