I love the Chai Muffins from Simply Nigella and make them often. I have a vegan friend I would like to bake them for but, although already dairy free they contain eggs. Is it possible to swap the two eggs for something vegan friendly? What could I use? Thank you!

Nigella's Chai Muffins (from SIMPLY NIGELLA) are made with almond milk that has been flavoured with the spices from chai teabags. Unfortunately we don't have a vegan alternative for the eggs in the recipe as we have not tried a vegan version of this recipe ourselves.
However, we would suggest perhaps looking at Nigella's recipe for Chocolate Tahini Banana Bread. In the introduction to the recipe, Nigella gives the conversion for a vegan version. As banana is a good leavener, it is easier to use egg substitutes for banana-based baked goods. You could probably try baking the mixture as muffins. We would estimate the baking time for muffins to be around 20 minutes but as vegan cakes don't rise as much the muffins will be a little flat, so the banana bread in loaf form may look a little more attractive.
