Can the recipe for the Banana Chocolate Muffins be used as is to make a cake? Or does it need adjustments and if so, which ones?
Our answer
Nigella's Chocolate Banana Muffins (from KITCHEN) are a good way to use up bananas that are past their best. They are also easy to make and will keep for 2-3 days. The recipe makes 12 muffins and could also be made into a banana bread loaf by baking the mixture in a 900g/2-lb loaf tin (approximately 23x13x7cm/9x5x3 inches). You would need to reduce the oven temperature to 170C/150C fan/325F and baking for around 1 hour, or until firm, risen to the touch and a cake tester inserted into the centre comes out clean.
The mixture is slightly more tricky for a round cake as the centre tends to peak quite a lot during baking and this makes it not particularly suitable as a layer cake. Also, if making a single layer then the cake will not be particularly deep. Instead, we would suggest trying Nigella's Chocolate-Topped Banana Cake, which is baked in a 23cm/9-inch springfom pan and topped with a glossy chocolate icing.
