Full question
Can you make the Girdlebuster Pie using Nigella's One-Step No-Churn Coffee Ice Cream, or does the ice cream have to be shop bought?
Our answer
Nigella's Girdlebuster Pie (from NIGELLA CHRISTMAS) has a cookie crumb crust that is filled with ice cream and topped with a butterscotch sauce. It can be made in advance and stored in the freezer, so is ideal for Christmas entertaining.
Nigella suggests coffee ice cream., though you could use other flavours, such as vanilla. Nigella's One-Step No-Churn Coffee Ice Cream could also be used. The recipe does not quite make 1 litre (1 quart), so the pie may not be quite as deep, but as the ice cream does not have as much air beaten into in it as commercially-made ice cream, it will probably be enough for the 8-10 portions. Alternatively, you could make a 1 1/4 quantity of the ice cream. Once you have whisked the ice cream ingredients together, spoon the mixture into the pie crust, cover loosely (trying not to touch the surface of the ice cream) and freeze overnight. Add the sauce the next day and freeze until needed. Also please note that no-churn ice creams do not keep as well as commercially-made ice creams, so the pie is at its best within a month of making.
