Can I make the Lemon Polenta Cake with only 150g of ground almonds and extra polenta?

Our answer

Nigella's Lemon Polenta Cake (from KITCHEN) is a gluten-free cake that is made with polenta and ground almonds (almond meal). The ground almonds help to add moisture to the cake, as well as some texture. Unfortunately we suspect that using 150g each of polenta and ground almonds would result in a dryer and slightly more mealy cake.

If you just use 150g of ground almonds and 100g polenta it could upset the balance of sugar, butter, eggs and dry ingredients. This would mean that the cake bakes differently and could take longer to bake, increasing the risk that the edges of the cake could become a bit dark. Unfortunately we can't recommend changing the proportions of ingredients used here. However, if you find that you only have 150g of ground almonds in your pantry then you could make up the extra 50g with another ground nut such as hazelnuts, walnuts or ground peanuts.
