Can I Make The Roast Duck Without Star Anise?

Asked by Ashleighdiver. Answered on 23rd April 2024

Full question

For the Roast Duck With Orange, Soy And Ginger is there another flavour that would work well with the orange and ginger that isn’t star anise? Family not a huge fan but I’d love to try this recipe!

Our answer

Nigella's Roast Duck With Orange, Soy And Ginger (from AT MY TABLE) has a crispy-skinned duck that is served with an orange, soy and ginger sauce that has been infused with star anise.

The star anise is not that powerful and adds a slightly oriental slant to the sauce, but if there is a real aversion to it then fennel seeds would be a possible alternative, though these still taste of anise so may not be ideal. We would suggest around 2 teaspoons of whole seeds and crush them slightly if you want a stronger flavour. You will also need to strain the sauce before adding the soy sauce, to remove the seeds. Otherwise, just omit the star anise from the sauce.
