For the Chocolate Peanut Butter Cake, is the icing firm enough to pipe on top of the cake or does it have to be spread?
Our answer
Nigella's Chocolate Peanut Butter Cake has multi layers of chocolate sponge that are sandwiched with a light and moussey peanut butter forsting. The frosting is whipped for several minutes to lighten it but the texture is soft serve rather than too runny.
We suspect it is possible to pipe the frosting, though as it is on the soft side we would not suggest using it for intricate piping. But a few rosettes on top of the cake or a border around the edge, where you don't need too much definition, should be fine. However, as you don't want the frosting layers of the cake to be too skinny, you may want to make extra frosting for piping. When you have finished smoothing the frosting on the top and sides of the cake, it may also help to refrigerate the cake for an hour or two, just to let the frosting firm up before piping any extra. This will give a firmer base for you to pipe onto. After piping, store the cake in an airtight container at room temperature.
