Full question
I would like to make the Gemelli With Anchovies, Tomatoes And Mascarpone. Is it possible to refrigerate or freeze leftovers of this once cooked? I live alone. Thanks.
Our answer
Nigella's Gemelli With Anchovies, Tomatoes And Mascarpone (from AT MY TABLE) is a very quick recipe where the sauce is assembled while the pasta cooks. The finished dish doesn't keep that well as the pasta tends to absorb the sauce as it stands and becomes drier.
You could keep leftovers for up to 3 days in the fridge and we would suggest eating them cold as a salad, maybe adding a drop of olive oil and a spritz of lemon to loosen the mixture slightly. But unfortunately we don't think that it will reheat or freeze well. However, the recipe serves two and it is very easy to halve the quantities for one portion. Leftover anchovies from the can could be frozen in an airtight container, covered in their oil, for up to 3 months. Because they are frozen in oil they don't usually freeze soild and can be used direct from frozen in hot dishes, but frozen anchovies tend to break up fairly easily, so are better for cooking into a sauce, rather than using slivers of anchovies or the whole fillets.
