Full question
Hello, I was planning to bake the Easy Almond Cake out of How to Be a Domestic Goddess and I don't have a 25cm tube pan. Looking everywhere, I have been unsuccessful in finding one. May I use a bundt pan instead? I do have a 23cm tube pan however, but the capacity with obviously be definitely too small. May I please have some advice on this? Thanks.
Our answer
The cake in the photograph for Nigella's Easy Almond cake (from Domestic Goddess and on the Nigella website) was made in a 25cm decorated ring mould. We do appreciate that these can be slightly difficult to find and Nigella suggests a 25cm/10-inch springform pan as an alternative.
A 23cm tube pan can be one of two things. In the UK we would think of this as a savarin ring mould (as used in Nigella's Yogurt Pot Cake). However in the US this would be the type of pan used for an angel food cake. We suspect from the comment on the size of the pan that you are referring to the savarin ring and we would suggest that it may be worth using this pan, filling it 2/3 full of batter and then baking any leftover batter in muffin cups. The baking time will be slightly shorter so start checking the cake 5 minutes earlier than stated in the recipe. The smaller cakes will take about 20 minutes to cook. It would in theory be possible to use a bundt pan (one that does not have too many deep grooves) but as these pans are quite deep the cake will not brown as well and will be difficult to remove from the tin, once cooled.
