Can I substitute blueberries for the chocolate and walnuts in the Gluten-Free Banana Bread? If so, how many blueberries?
Our answer
Nigella's Gluten-Free Banana Bread (from COOK, EAT, REPEAT) is made with a combination of rice flour and ground amonds (almond meal). The loaf is studded with chopped walnuts and chunks of dark chocolate.
We suspect that is possible to use blueberries instead of the chocolate and walnuts. However, you need to bear in mind that the blueberries will sink towards the bottom of the loaf as it bakes. We would suggest using 150g (1 cup) of blueberries, as if you use too many it will likely make the banana bread too soggy. We would suggest folding 3/4 of the blueberries into the banana bread batter then sprinkling the remaining blueberries over the top of the banana bread just before you put the pan into the oven to bake. You should be able to use either fresh or frozen blueberries. The banana bread will not keep as well with blueberries, around 2 days in an airtight container in a cool place or in the fridge. Please note that as we have not tried this recipe with blueberries ourselves, we are unable to guarantee the results.
