I'm making the Lemon Tendercake for the first time. I opened what I thought was a can of coconut milk but it was all coconut cream. Can I use that thinned with a bit of water? Thank you!

Nigella's Lemon Tendercake With Blueberry Compote (from AT MY TABLE) is a vegan cake that has a moist and fluffy texture. The cake uses coconut milk but Nigella notes that for the coconut milk you should try and go for a good quality brand and not to shake the can before using it.
The recipe uses as much of the thick liquid from the top of the can as possible. This is actually coconut cream. So if you have a can of coconut cream you can probably use 275g (1 cup) of this in the cake and maybe switch just 1-2 tablespoons of this cream with water. However, we would mention that first you should check that the coconut cream is unsweetened and not the sweetened type of coconut cream that is used for cocktails.
