Nigella's Couscous With Pine Nuts And Dill is served as an accompaniment to the Moroccan Vegetable Pot and is a good side dish for many other meals as well. The dill provides a slight anise flavour, though it is very subtle.

Generally we would prefer not to use dried herbs in the couscous as the texture isn't quite the same and the flavour is slightly more assertive in dried herbs. It is better to use dried dill in a sauce or dish where it will be cooked first. As the Moroccan Vegetable Pot is sprinkled with coriander (cilantro) it would be easiest to use this as an alternative or you could use chopped parsley or thinly sliced chives. Or you could even use a combination of any of these.
