Full question
Can the sauce for Nigella's Drunken Noodles recipe also be used on Japanese buckwheat soba noodles? They are prepared in a similar way, and can be eaten cold. Thanks.
Our answer
Nigella's recipe for Drunken Noodles (from SIMPLY NIGELLA) is a version of a Thai dish, where cooked rice noodles are tossed with a hotly spiced oil and then seasoned with soy and oyster sauces. The dish is best served warm, though leftovers can be eaten cold.
We see no particular reason why you could not make the dish with Japanese soba noodles or even with Chinese egg noodles. The thin sauce should cling well to these noodles and they can be eaten hot or cold. However, usually both of these types of noodles need to be cooked in boiling water and then drained, rinsed with cold water and drained again thoroughly before they are used for the dish. We suggest following the cooking instructions on the packaging and then start checking the noodles for "doneness" about 1 minute before the end of the suggested cooking time, as you do not want the noodles to be overcooked and mushy.
