Nigella's Chocolate Raspberry Pudding Cake (from HOW TO EAT) is a warm chocolate sponge studded with fresh raspberries and flavoured with a little raspberry liqueur. We suspect that you could use cherries as an alternative to raspberries.

You would need to replace the raspberries with the same weight of pitted cherries. If you are using frozen cherries then it may be easier to use the cherries from frozen. You could also use drained canned cherries but drain them well and then blot them with paper towels to make sure that as much liquid as possible is removed. Kirsch would be a good replacement for the Chambord or you could also use cherry brandy as an alternative. However, as we have not tried the recipe with these ingredients we are unable to guarantee the results.
