Full question
Just wondering if anyone has any ideas for a dairy-free alternative for the Chocolate Peanut Butter Fudge Sundae, instead of cream, as I would really like to make this.
Our answer
Nigella's Chocolate Peanut Butter Fudge Sundae (from NIGELLA EXPRESS) has a home-made sauce that is a simple combination of cream, golden syrup, milk chocolate and smooth (creamy) peanut butter. We assume that for a dairy-free version the ice cream will be a dairy-free ice cream, as these are now readily available in most supermarkets.
As the sauce contains peanut butter, it is usually quite stable as long as it isn't boiled. So most dairy-free cream alternatives should work. We would suggest avoiding coconut cream as it has a strong flavour. But soy, rice or other nut-based creams should be fine. If possible try to choose one that is marked as suitable for cooking and for all of the alternatives keep the heat low, stir occasionally and don't boil the sauce. You can switch the milk chocolate for dark (bittersweet) chocolate or it is now possible to buy dairy-free milk chocolates. However, we would mention that as we have not tried the sauce with these alternatives, we are unable to guarantee the results.
