I love the simplicity of baking the Eggy Vanilla Cake, i.e. stick everything into a food processor. Would it be possible to turn it into a chocolate version somehow?
Our answer
Nigella's Eggy Vanilla Cake, also known as the Spruced-Up Vanilla Cake (from Christmas), makes a large bundt cake that can be enjoyed at any time of the year. Nigella has a spiced version that includes ground cinnamon, ginger and cloves.
We suspect that the cake could be made into a chocolate version. Adding cocoa can dry out some cakes, but in this particular case the batter is quite liquid so we suspect that you can switch 50g (1/3 cup plus 1 tablespoon) of the flour with 50g (1/2 cup) of (unsweetened) cocoa powder. The cake will have a slightly more tender crumb so make sure that you grease the pan really well, getting right into any nooks and crannies if you have a fancy shaped tin. We would however mention that as we have not tried the cake in this form, we are unable to guarantee the results.
