When I follow the Cocktail Sausage recipe the honey in the glaze goes black and forms a blackened smelly crust on the dish that I'm cooking the sausages on. Is there a way to combat this?

Nigella's Cocktail Sausages (from NIGELLA EXPRESS) are small sausages that are roasted with a glaze made from honey, soy sauce and sesame oil. The sausages are roasted at quite a high temperature and this should not normally be a problem as the cooking time is not that long. However the sausages should be cooked in a roasting tin with high sides and in which the sausages should fit comfortably in a single layer without too much space in between them (the recipe states a large roasting tin as there are approximately 75 sausages!).
If the roasting tin is too large or has very shallow sides then this could be the reason for the honey in the glaze burning. Also note that the 220c temperature is for a regular oven and adjustment should be made for fan or convection ovens (we suggest 200c for these ovens). You can adjust the tin used or reduce the oven temperature by 10-20c and allow a slightly longer cooking time. You could also line the base of the tin with a piece of baking parchment (parchment paper), or a reusable non-stick liner, as this will prevent the glaze from coming into direct contact with the bottom of the tin and will reduce the risk of it burning on the bottom of the tin. Lining the tin will also make cleanup a little easier.
