Nigella's Lemon Tendercake With Blueberry Compote (from AT MY TABLE) is a moist and zesty vegan cake that is topped with a combination of home-made berry compote and cool, creamy coconut milk yogurt. Coconut milk yogurt is cultured coconut milk that is a non-dairy alternative to cow's milk yogurt. It is usually made with vegetable-based cultures so is also vegan. It is often also labelled as "yogurt alternative". The plain coconut milk yogurt is particularly good for cooking as it has a mild flavour and is not too sweet.
