Cream in Salted Caramel Sauce

Hi. Can I use thickened cream instead of double cream? Or do both creams work the same here? I'm in Singapore.

Our answer

Nigella's Salted Caramel Sauce (on the Nigella website) is made with UK double cream. However as the cream is used in liquid form, rather than needing to be whipped, then it is possible to use other creams.

In Singapore we understand that there may be thickened cream and whipping cream. Thickened cream can be a UHT/sterilized type or a type that is fresh and used for whipping. We suggest that you should look at the fat content listed on the packaging. If the cream has a fat content of over 35% then it should be fine to use in the sauce, regardless of whether it is marked as whipping or thickened cream. You may also like to take the saucepan of hot butter and syrup off the heat before adding the salt and cream as this will also reduce the risk of the cream splitting when it is added.
