Can you advise on the size of ramekins to use for 8 of the Glitzy Chocolate Puddings? Also should the puddings be served warm or cold? Thanks!

Our answer

Nigella's Glitzy Chocolate Puddings (from NIGELLA EXPRESS) are little chocolate sponges served with a chocolate sauce. They are given added "glitz" with a topping of crushed honeycomb candy. The puddings should be served warm. Leftovers should be refrigerated, covered, for up to 5 days and eaten cold or warmed for a few seconds in a microwave - but do not microwave unless you have made the puddings in microwaveable dishes, the gold-coloured ramekins in the photograph should not be put in a microwave. Please note that leftovers will never quite have the lightness of the freshly-baked puddings.

The ramekins are medium-sized and have an approximate capacity of about 200ml (just over 3/4 cup). If you have smaller 150ml ramekins then you should fill the ramekins no more than half full of sponge batter and the baking time may be slightly shorter, we would suggest checking at about 20 minutes, the sponges should have risen, be firm to the touch on top and a cake tester should have damp crumbs clinging to it but not raw cake batter. Any leftover batter can be put into an extra ramekin or into a paper cupcake liner in a cupcake pan.
