I made the Easy Sticky Toffee Pudding but after 1 1/2 hours the cake was still raw at the bottom. Not sure what to do with it!

Our answer

Nigella's Easy Sticky Toffee Pudding (from NIGELLA BITES is a self-saucing pudding. This means that when you bake the pudding the sponge rises up through the water, butter and sugar that is put over the top of the uncooked sponge batter and a sticky, gooey sauce is formed on the bottom. This also makes the pudding easy, as you do not need to make a separate toffee sauce.

We suspect that you are mistaking the sauce on the bottom of the pudding for uncooked sponge batter. The base of the pudding should be sticky and sauce-like with the sponge cake element on top. If you are unsure then insert a cake tester into the centre of the sponge. The tester should come out clean or with a couple of damp crumbs attached. Obviously don't push the cake tester to the bottom of the dish, otherwise it will come out with some sauce on. As the cake cools the sauce will tend to be absorbed by the sponge, so we suggest serving this pudding as soon as possible after baking. If you would like a more traditional version of a Sticky Toffee Pudding then we would suggest trying Nigella's new recipe for Sticky Toffee Pudding from AT MY TABLE.
