Egg Tortilla Pie

Full question

The Egg Tortilla Pie mentions using three eggs but not whisking them - if it is shared between 2 people then one person would get only one egg! Do the the eggs combine as they cook and/or would it matter if I whisked them first like I would for scrambled eggs?

Nigella's Egg Tortilla Pie (from AT MY TABLE) uses two tortillas as the crust for a pie - one for the base and one for the top - that is filled with cheese, ham and eggs. It makes a good breakfast, brunch or supper dish for two people, or one with a very robust appetite.

The recipe only mentions two eggs, not three, so there should not be an uneven sharing of the pie and filling for two people. The eggs are cracked into the base of the pie, on top of the ham. They are left whole and not whisked, and as the pie bakes they cook through so that they are a little like eggs en cocotte. This is our preferred way of using the eggs and we have not tried whisking the eggs. There is a small risk that the whisked egg could leak out of the pie, but if you did whisk the eggs they would probably set as a sort of omelette in the base of the pie.
