Full question
Can I use cherry tomatoes (skin on) for the Egyptian Tomato Salad?
Our answer
Nigella's Egyptian Tomato Salad (from NIGELLA BITES) macerates thinly sliced skinned tomatoes in garlicky oil to deepen the flavour. The dish is also sometimes known as Egyptian Pickled Tomatoes. It may not be strictly necessary to skin the tomatoes but it is actually a very simple process and with the skins off it is probably a little easier to slice the tomatoes thinly.
We suspect you could use halved cherry tomatoes for the salad, but the cherry tomatoes may not absorb the flavour of the oil as readily as the thinly sliced large tomatoes, due to their skins being on and also their size. If possible we would prefer to use the sliced tomatoes. Instead you may like to try Nigella's Old Fashioned Tomato Salad, which uses cherry tomatoes.
