Full question
Do you think the Fish Finger Bhorta could be made with gluten free fish bites? They are quite nice, irregular shaped and have a gluten-free batter/crumb. Can you also please advise if many of the recipes in Nigella's new book could be gluten free adaptable? Thank you in anticipation!
Our answer
Nigella's Fish Finger Bhorta (from COOK, EAT, REPEAT) is a spicy mixture of vegetables and fish fingers (fish sticks). One of the keys to the dish is the textural contrast between the crisp coating of the fish fingers and the soft spinach.
We suspect that you could use gluten-free fish fingers or fish bites as long as the coating is crisp when cooked. So something made with gluten-free breadcrumbs should work, though a gluten-free batter could be a little too soft. Make sure that you cook the gluten-free fish fingers for slightly longer than suggested on the packet and at quite a high temperature, so that the coating becomes really, truly crisp. We are also very happy to say that COOK, EAT, REPEAT has several gluten-free and vegan recipes and also gives gluten-free and vegan options for other recipes in the book wherever possible.
