Nigella's Gluten-Free Apple And Blackberry Pie (from SIMPLY NIGELLA) has a gluten-free pie crust made with a combination of plain (all-purpose) gluten-free flour and xanthan gum. The xanthan gum helps to give the dough some extra elasticity (in the absence of gluten), making it easier to roll out and handle.

Dove's Farm is a well-known UK brand and is fine to use for this recipe. Most other gluten free plain or all-purpose flour mixes that are sold should also be fine, as long as they are based on rice flour and do not have added xanthan gum. If you have a gluten-free baking mix or 1 for 1 mix that contains xanthan gum then you may still be able to use it, but omit the xanthan gum from the recipe and make sure that the baking mix does not include any baking powder or other leavening agents.
