Full question
Can the Totally Chocolate Chocolate Chip Cookies be made with whole wheat flour?
Our answer
Nigella's Totally Chocolate Chocolate Chip Cookies (from NIGELLA EXPRESS) are chocolate cookies studded with chocolate chips. They are made with regular plain (all-purpose) flour as this helps to give the cookies a crips exterior and a slightly soft interior. Wholemeal (whole wheat) flour is less refined than plain flour and the bran in this type of flour can cause a couple of problems. The bran absorbs quite a bit of liquid, which can make the cookies a little dry, and it also changes the texture of the cookies. So we would not recommend using all wholemeal flour.
It may be possible to use half wholemeal flour and half plain flour, though as we have not tried this combination we are unable to guarantee the results and the cookies will likely be a little drier and crisper than the originals. You may also like to try Nigella's Triple Chocolate Buckwheat Cookies. These are made with buckwheat flour, which adds a delicious nutty flavour as well as being higher in fibre than plain flour.
