Full question

The recipe for the Lamb Patties makes 34, which is too many for my small family. Are you able to make them up and freeze them? Then defrost and cook at a later date?

Nigella's Lamb Patties With Hummus And Pitta (from NIGELLA SUMMER) have mini lamb burgers that are cooked and then served in warm pitta breads with hummus and salad. The lamb patties can be frozen and are best frozen in uncooked form.

We would suggest that the patties are put on a baking sheet lined with baking parchment (parchment paper), covered loosely with clingfilm (plastic wrap) and frozen until solid. Once the patties are solid they can be transferred to a resealable bag or airtight container and frozen for up to a month. To thaw the patties, put them on a plate or lipped baking sheet, cover loosely with plastic wrap and leave in the fridge overnight. Cook following the instructions in the recipe, making sure that they are piping hot all of the way through before removing them from the frying pan.
