Frosting For Ginger And Walnut Carrot Cake

Is there an alternative to the cream cheese in the frosting to the Ginger And Walnut Carrot Cake as I do not like any cheese.

Our answer

Nigella's Ginger And Walnut Carrot Cake (from AT MY TABLE) is topped with a buttery cream cheese frosting. It doesn't particularly taste of cheese but if you prefer to try an alternative then you could mix up some icing sugar (confectioners' sugar) with a little warm water to make a glace icing with a spreading consistency. Pour this over the top of the cake and spread out slightly so a little drips down the sides, then sprinkle over the chopped walnuts and crystallised ginger.

The cake is also wonderful on its own without any frosting and if you are serving it as a dessert then you could serve it with some whipped cream and sprinkle the chopped ginger and walnuts over the cream. You could also switch the cream cheese for extra butter, though the frosting will be quite rich. If you do this then you can omit the cornflour (cornstarch) from the frosting as this is only needed if you make the frosting with cream cheese.
