I made Nigella's regular Banana Bread recipe with gluten-free plain flour - it was still tasty, but a little drier and crumblier than normal. I know Nigella has a GF version, with yoghurt, but would that work with the rum raisins? Thanks.
Our answer
Nigella's Gluten-Free Banana Bread is made with a combination of ground almonds, rice flour and yogurt instead of regular plain flour. This combination gives a light and tender cake, which is less dense than a traditional banana cake.
The gluten-free cake is studded with walnuts and chocolate chunks and we suspect that you may be able to switch the chocolate for the rum-soaked raisins from Nigella's regular Banana Bread recipe. We would use the 100g of raisins and 75ml or rum and soak and drain the raisins as described, then sit the raisins on some paper towels to remove any excess moisture before adding to the batter. However as we have not tried the recipe in this form, we are unable to guarantee the results.
