Our answer

Nigella's Maple Chicken 'N' Ribs (from NIGELLA EXPRESS) marinates chicken thighs and pork ribs in a mixture of apple juice, maple syrup and soy sauce. The marinade helps to tenderize the meat and as the chicken and ribs cook the marinade forms a sticky, glossy coating.

As the amount of maple syrup is relatively small (4 tablespoons) it would be possible to replace it with a runny honey (rather than a set honey, which is more difficult to mix into the apple juice). Maple syrup has a buttery, vanilla flavour and it is difficult to replicate this exactly with honey so we would suggest using a mild honey, such as acacia, orange blossom or a mild blended honey.
