How Can I Adjust The Lime And Coriander Chicken For Larger Chicken Breasts?

The Lime And Coarinder Chicken recipe is very tempting. But I can't get 150g chicken breasts, the ones where I live tend to be 200g. Can I adjust the cooking time?

Our answer

Nigella's Lime And Coriander Chicken (from AT MY TABLE) briefly marinates chicken breasts in garlic, oil and lime juice before pan frying them. Nigella suggests using chicken breasts with a weight of around 150g each as they are the standard UK supermarket size.

If your chicken breasts are larger then it should not particularly affect the cooking time as the breasts are flattened before cooking, so should be about 1cm thick regardless of the weight. However, heavier breasts will spread out more as they are flattened and you may need to cook them one at a time in the frying pan as crowding the pan too much will cause the breasts to steam (and not become golden brown) rather than fry. When you buy the chicken breast you can look underneath to see if the tenderloin (the thin extra muscle) is still attached. If the tenderloin is there then you could remove it and use it for another dish, or freeze it to use another time, and the remaining breast will probably be closer to 150g.
